What Happened When Orca Inventory Took the Stage at the Sysco Awards

On August 21, the Orca Inventory team had the opportunity to present at the Sysco Awards, and it’s safe to say the room exceeded every expectation we walked in with.

With 150 Sysco Sales Consultants and District Sales Consultants in attendance, the energy was immediate. This wasn’t a room full of people who had to be convinced that inventory management matters. These were professionals who work with restaurant operators every day, who hear the same concerns week after week: food cost is up, margins are thin, something is off but nobody can pinpoint exactly what. They came ready to learn and walked away with real solutions that will make a huge impact for their clients.

Breaking Down the Numbers That Matter

Paul opened the session with a deep dive into the 30/30/30/10 rule (the mental model that maps where a typical restaurant’s revenue actually goes) and the concept of the Magic Nickel: the 5 cents on every sales dollar that operators actually get to keep after food, labor, and overhead take their share. The main point was this: it takes $20 in new revenue to generate $1 in profit, but every dollar saved in food costs goes straight to the bottom line.

It sounds simple, but the room’s reaction told the real story. Seeing the math laid out clearly reframes the entire conversation about what operators actually need: not necessarily more customers, but better visibility into what’s happening to the revenue they already have.

Paul also gave attendees a first look at what’s coming down the pipeline: Menu Engineering and Orca Inventory’s upcoming Inventory Certification, both of which generated significant buzz in the room and set the stage for deeper conversations at the tables.

The Response From the Room
